Timbers Food Company
Timbers features the quaint décor of an original downtown Banff house turned into a 60-seat restaurant. Out front, Banff’s largest street level patio bursts with colourful flowers, while inside is a small bar with high seats and espresso offerings. This is an informal, friendly place that is popular with locals. Patrons are treated to Canadian and Italian flavours created by chef/owner Nigel Walker who is Savoy Hotel trained and has 32 years of restaurant experience. Nigel makes his own Hollandaise and other sauces. Visitors from Britain rave about his beer battered fish and chips.
- Breakfast: includes egg Benedict with smoked salmon or maple pepper ham; heuvos rancheros (re-fried beans on tortilla with salsa, cheese, fried egg)
- Lunch and Patio Selections: calamari with salsa; garlic prawns; Thai salad with grilled chicken option; hot wings; nachos with chicken or beef option; portobello stack with roasted sweet pepper, grilled zucchini and Asiago; stuffed bison burger; grilled salmon burger; beer battered fish and chips

- Pasta: Nigel’s traditional lasagna, spinach cannelloni, ham or seafood Roselline (ham mozzarella roses or salmon, white fish, scallops and shrimp with creamy tomato sauce); linguine chicken pesto; fettuccine smoked salmon; fettuccine butter chicken
- Orange Infused Salmon: with ginger glaze
- Baked Stuffed Chicken Breast: with goat cheese, toasted almonds, spinach and tomato basil sauce
- AAA Alberta Beef Steaks: tenderloin with mushroom and leek duxelle; rib eye au jus
- Braised Lamb Shank: with red wine sauce
- Desserts: double chocolate brownie with vanilla gelato; tiramisu; cheesecake; caramellata of the day (Italian-style white chocolate crème brûlé)
