The Evergreen
Located off the lobby of the Delta Banff Royal Canadian Lodge is a hidden gem that is too often overlooked by visitors. The Evergreen delivers what they advertise: “elegance without attitude” and the best of Canadian cuisine. This Banff restaurant features an open kitchen where German-trained executive chef Hans Hacker and his team transform local ingredients into globally influenced dishes that highlight the flavours of Alberta. Menus change frequently to take advantage of seasonal offerings. The dining room is both elegant with linen tablecloths, and cozy with a roaring fire.
